What AOI by KAIYŌ is all about

AOI by KAIYŌ is Gaia Group’s newest concept designed to deconstruct formal Japanese fine dining into a relaxed, social experience. The menu, which features over 100 items spanning 20 categories, leans heavily into interactive, hands-on dishes that encourage diners to play with their food. Guests can build their own bites using either the Caviar Jewelry Boxes (from HK$198) or the Premium Seafood DIY Wrap Set (HK$198), both of which serve premium catches, rice, and crispy nori separately for custom tableside assembly.

Beyond the do-it-yourself options, other visual highlights include the Double Caviar, Uni & Toro Crystal Cup (HK$148), the multi-layered Premium Uni, Caviar and Toro Sushi Napoleon (HK$138), and the Signature Jumbo Prawn Nori Taco (HK$138).

Hot dishes and hot pots on offer

AOI caters to those needing comfort food alongside raw seafood options. The kitchen delivers hotel-grade tempura crafted with precise oil temperatures, alongside Kansai-style sukiyaki such as the Kansai-Style Nagasaki Wagyu Sirloin Sukiyaki (HK$268). Individual Kamameshi rice pots come topped with flounder fin, truffle, and uni (HK$198), while seafood lovers can tuck into Hiroshima oysters served crisped, steamed, or floated in creamy ramen (HK$158). Group celebrations are covered by the Salmon Sushi Cake (HK$168), a savoury alternative to standard birthday fare.

Minimalist design with a central stage

The interior pairs clean timber lines and soft lighting with an open sushi bar at its centre. Guests can watch the culinary team plate up dishes against a backdrop of illuminated seascape artwork. It provides a modern setting for casual group dinners or post-work drinks.
